I'm never quite sure if I am spelling Macaroon's the correct way or not?!!?
These were made at Christmas time to go in hampers for various people, but I kind of figured that they would be equally as good for Valentines Day.
To make them I just used the Peppermint Macaroon recipe from my very first attempt at baking them. Instead of the nutella filling, I used buttercream which also had a couple of drops of peppermint flavouring added to it. In hindsight this was maybe a touch too far on the peppermint flavouring for some, but I loved them!
The candy cane swirl was achieved by dipping a skewer into a tub of red coloured food gel, I then dragged the skewer along the length of the inside of the piping bag before adding my macaroon mixture. When the wee domes are piped onto the trays the swirl 'magically' appears on the macaroon. Easy peasy!
Once the biscuits are baked, sandwich them together with the buttercream and then roll the edges in some finely crushed peppermint candy canes ... for valentines day though you could roll them in sanding sugar or some of those teeny tiny love heart sugar sprinkles that seem to be everywhere at the moment.
These are so pretty, and sound like a delicious Valentines treat. Yum, Yum!

ReplyDeleteI've been confused over them and not just the spelling since arriving here, because macaroons to me used to be coconut little mountain shaped cakes. I don't particularly like coconut so these particular macaroons are much more appealing :D
Macaron, macaroon, however you spell it these spell delicious Chele!! Yours look just wonderful!

ReplyDeleteI thought it was macaroon for the coconutty ones and macaron for the fresh version with the buttercream in the middle but I wouldn't care what these are called - the swirls and the crunchy coating on the buttercream are genius and sound like a great addition
